Cheese That Isn’t Actually Cheese

Ever bought shredded Parmesan and seen the phrase “cheese product” on the label? That’s because some shredded cheeses contain additives like cellulose (wood pulp) to prevent clumping, and in extreme cases, the percentage of actual cheese can be surprisingly low.

Products labeled “processed cheese food” or “cheese product” legally contain less real cheese than their straightforward counterparts. They melt well but offer less flavor and quality. If you want the real deal, buy blocks and grate them yourself—it’s tastier and far more honest.
